Watermelon and Ice Cream might just be the summer match we’ve been waiting for.
This quick dessert hack offers endless flavor possibilities and fewer than 4 steps.
With my quick-cut ice cream tip, you will be pleasantly surprised by how little mess there is and how great they come together.

To get started, you will need to grab a tub of your favorite ice cream and a summer watermelon.
The secret to this summer watermelon dessert
The secret is Tajin, of course! Isn’t that the best way to elevate any summer watermelon recipe?
Vanilla Ice Cream pairs so well with the watermelon and Tajin used in this recipe. I suggest opting for ice cream in traditional cardboard rounds so you can cut it straight from the box and into your watermelon sandwich.

Watermelon Ice Cream Sandwich
Equipment
- 1 Knife
Ingredients
- 1 Large Watermelon
- 1 Tub Ice cream I used vanilla - You will want a round tub.
- 1 Container Tajin
- 1 Container Sprinkles
Instructions
- Start by slicing your watermelon. Slice once half way across. You will want triangular shaped pieces about 1 inch thick.
- Once you’ve sliced your watermelon begin slicing your ice cream tub. You will start by laying your tub on your cutting board. Slice straight into your tub beginning at the bottom. Slice 1 inch rounds into your tub and remove the packaging.
- Begin forming your dessert fruit sandwich. Place one triangular slice of watermelon, one slice of 1 inch thick ice cream topped with another triangular slice of watermelon. Cut off excess ice cream.
- Sprinkle with Tajin, or sprinkles.
- Freeze for a few minutes before serving or serve immediately.

Save the ice cream scoop & use a knife instead
This recipe calls for cutting your ice cream straight out of the tub, which not only prevents the mess of scooping and dishes but also saves time.
After cutting your ice cream tub, you are left with uniform, beautiful ice cream portions. The perfect fruit-to-ice cream ratio.

The possibilities are endless. Whether you choose to use vanilla and tajin like I did for this recipe, or sprinkles and rainbow sherbet.
These ice cream fruit sandwiches are a delicious way to add both sweetness and fun to your summer day.
PS. Lucky charms ice cream dessert, you might just love.
