Easter morning is the perfect morning for brunch mimosas. These champagne forward drinks with Easter egg ice cubes will bring all the festive fun to our egg hunt drink bar.
Plastic Egg Ice Molds
I was frustrated to find that all the egg molds only would work for half an egg, so I decided to make my own with our stash of plastic Easter eggs.
Supplies
To create your own Easter egg ice cubes you’ll need these supplies:
- Plastic easter eggs
- Tape
- Scissors
- Juice or water to fill your eggs
Instructions
1. To make my Easter mimosa ice cubes, I started by taping the plastic egg over any open spots. My eggs had small tiny dots of the bottom that I taped up.
You might also tape along the center of the egg if it’s not attaching securely.
2. Once the eggs are taped, cut an opening on the top large enough to fit a funnel or stream of liquid in.
3. Set the eggs upright and pour in your mimosa juice. I used a measuring cut to pour the juice into my eggs.
You can use any kind of juice for these Easter egg ice cubes, a few Easter morning favorites in my house are carrot juice, orange juice or guava juice if you can find it locally.
4. Freeze your eggs for at least 5 hours, overnight is best.
Once the eggs come out of the freezer – they’ll be the perfect size and shape for Easter mimosas.
Just add champagne to taste!
I can’t wait for this bubbly sweet way to kick off Easter brunch this year.
Cheers – Victoria
