Peonies are by far my favorite flower and I’m so happy that I have a few bushes planted in my garden at home now.
I decided to brighten up the season by boiling down a few of the pink pretty leaves and making a sweet and tasty peony cocktail to enjoy. Since you know I am a Gin girlie – this Peony Gin Gimlet is a pretty, slightly pink drink to make for all the spring parties!
Not only is the peony gimlet the perfect kind of sweet to taste, but it’s also so pretty!
I can’t wait to serve it all spring long. Here’s how I make it.
Peony Simple Syrup
I start by making the peony simple syrup. Do do this, I wash off my peony leaves.
I boil 1 cup of water with 1 cup of sugar until dissolved (this is a basic simple syrup base that I use for everything).
As soon as I pull it off the heat I submerge the peony leaves in the syrup. Once cooled I stir and set in the fridge for 6 hours or overnight.
After it has had time to cool and meld together, strain out the peony leaves for a simple syrup that is sweet, pink and floral.
Peony Gimlet
Now it’s time to mix the cocktail.
To make this peony Gin Gimlet, I used:
2 oz Gin
1 oz peony simple syrup
and 1/2 a lemon.
Shake that up and top with sparkling water for a spring drink that looks so pretty.
Serve with ice if desired, or straight up.
To make a peony Gimlet mocktail, just leave out the gin.
