It’s the perfect month for a Lucky Charms ice cream recipe. If you’re feeling a sweet tooth coming, these bars will instantly quench your craving.

Lucky Charms Ice Cream Bars
Equipment
- 10 popsicle sticks
Ingredients
- 1 carton ice cream make these in your favorite ice cream flavor
- 1 bag Lucky Charms cereal
- 1 bag Lucky Charms marshmallows
Instructions
- Start by using the ice cream carton hack to create your ice cream bars. To do this use a large knife to slice the frozen ice cream carton into 10ths. Cut once the long way and then smaller cuts. Make sure the cuts go all the way through.
- Stick your popsicle sticks into the carton to make the bars. Leave enough room for each stick to be easily held.
- Take the carton off, separate the bars and pour your cereal into a large tray. I mixed a bag of Lucky Charms cereal with extra marshmallows for a sweet party treat.
- Roll the bars in the cereal until covered and freeze on a baking tray for about 2 hours, or until ready to use.
Notes
Ice cream carton hack
I used the ice cream carton hack to make ice cream bars the easiest.
If you haven’t tried this yet, it’s my favorite way to make ice cream ready for a group the easiest way possible.
Just cutting the ice cream with a knife and sticking in popsicle sticks make for party ready bars in almost no time.
Lucky Charms Marshmallow Toppings
I mixed a bag of regular Lucky Charms with this bag of marshmallows to create the ice cream topping.
You can do any combination to top this treat, but I think the extra marshmallows give the ice cream bars the sweet and gooey texture I was after.
A little cereal and a lot of sweet!
Lucky Charms is a fun cereal pick for this ice cream for spring and rainbow birthday parties, but I might try some other cereals in the future.
If your birthday girl or boy has a favorite cereal or ice cream, I love that this works with any flavor or brand!
Enjoy the treat – Victoria
